Whether you make bath products or candles, reading up on all scent trends can provide lots of creative ideas.Mintel has made no fragrance and flavor predictions for 2011 (they're a reliable source.) So I am having to pick up ideas from other places. Here's what I've gathered:

Nature's Garden Candles puts out an awesome guide each year for fragrance and color trends. The 2011 home fragrance report quotes Mintel's 2010 predictions along with some new ideas. You can find the last few trend guides here.
